Ingredients
For the crust
- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup melted butter
For the filling
- 1 cup key lime juice
- 1 can sweetened condensed milk
- 4 egg yolks
- Zest of 2 key limes
For the topping
- Whipped cream
- Lime slices for garnish

Instructions
Prepare the crust
Preheat the oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of mini muffin tins.
Make the filling
In a separate bowl, whisk together key lime juice, sweetened condensed milk, egg yolks, and lime zest until smooth.
Fill the crusts
Pour the filling into the crusts until just full. Bake for 10 minutes. Allow to cool.
